The etymology of the Italian word for eggplant is melanzana, which means (mela = apple, insane = crazy): “crazy apple”.In ancient times they thought that if you ate this vegetable it would make you crazy, but if this recipe makes you go crazy, so be it!
The Beccafino way means to create a sort of sandwich with the slices of eggplant, filled with pecorino cheese, anchovies and basil. Finally, you dip the whole thing in beaten eggs and then you fry it. Mmmmm!
