This recipe completes the list of the many Venetian risotto. For its simplicity and taste it can be eaten almost everywhere such as the town and nearby area of Feltre, in the mountain resorts and cabins of the Feltrine Alps, as well as inside the beautiful park of the Bellunesi Dolomites.
The type of bean used (borlotti) is very tasty and a bit sour. In this recipe the beans are used to make a sort of dense, creamy mixture which is then poured into the middle of the rice crown that has just been pulled from the oven and taken out of its form.
