Goby in the Laguna. There are various species of goby; this small fish isn’t known for it’s intelligence, even though it has a big head, but it is excellent to eat.This kind of goby is caught in the Venetian Laguna and is the principal ingredient for this risotto. The fish is cooked and sieved, then flavoured with only bay leaves and onions so as to not cover its delicate taste.
